Sailboat Galley – Beer Bread

Beer Bread Self-rising flour, a bit of sugar, and a beer (just one, not three). It is seriously the easiest bread you’ll ever make.

Beer Bread is buttery, chewy, and tastes like your favorite beer. The yeast in the beer interacts with the sugar to help the bread to rise (and the baking powder gives the bread an additional boost to keep it from becoming dense).

Beer bread is a savory quick bread that uses the carbonation in beer for its leavening agent along with the baking powder salt combo. Like other quick bread recipes, you make beer bread without yeast, a shortcut that makes it especially easy to whip up in no time.

How to prepare it:

  • Preheat oven to 375° F.
  • Combine flour, sugar, salt, baking powder, dill, and cheddar in a large mixing bowl. Slowly stir in beer and mix just until combined. The batter will be thick. 
  • Spread in a greased 9″ x 5″ loaf pan, brush with egg glaze if desired, and bake until golden brown and a toothpick stuck in the center comes out clean, about 45 minutes.
  • Cool in the pan on a rack for 10 minutes. Remove from pan and cool for 10 more minutes. Serve warm or at room temperature.
Garlic and Herb: Eliminate the dill. Add 1 teaspoon each of dried rosemary, oregano, thyme, and garlic powder to the basic mix.
Rosemary and Feta: Eliminate the dill and cheddar. Add 2 teaspoons dried rosemary and 3/4 cup crumbled feta cheese (about 4 ounces) to the basic mix.
Italian: Eliminate the dill and cheddar. Add 1 teaspoon each of dried basil, oregano, and garlic powder and 1/2 cup grated Parmesan or Romano cheese to the basic mix.
