Zucchini noodles are a delicious, healthy pasta alternative that makes this dish worthy of eating on repeat. They’re gluten-free, low-carb, and keto/Paleo/Whole30 friendly.

How to prepare it:

  • To make pasta with zucchini and salmon, first prepare all the ingredients: remove the skin from the salmon fillet and remove any bones with tweezers, then cut it into cubes 1. Trim the zucchini 2 and cut them into julienne strips using a mandoline or a mixer 3.
  • Clean the scallions and slice them thinly 4. Chop the mint 5 and almonds, and ground them with a mixer6. Finally, put a pot of boiling water on the heat to cook the pasta.
  • Heat a little oil in a pan and fry the scallions 7, then add the zucchini 8 and a pinch of salt. Cook over medium heat for about 5 minutes, and flavor with fresh mint 9.
  • Add the salmon 10 and brown it quickly, then add white wine 11. Meanwhile, cook the pasta in boiling salted water 12.
  • When the pasta is al dente, drain it in the pan with the sauce, taking care to keep the cooking water 13. Sauté everything over high heat, add some pepper 14 and deglaze with the filtered lemon juice 15.

If you prefer, you can replace mint with thyme or parsley.
